EGGPLANT PIZZA

Here is a ‘quick to fix’ lunch, appetizer, or vegetable for supper. Don’t tell the kids its eggplant and they will like it.


  1. Wash the eggplant and slice it crossways into ½” rounds

  2. Put it on a plate and skootch the slices like this > ///////

  3. Microwave on high for 4-6 minutes or until tender through

  4. Oil a baking sheet with olive oil and place the individual rounds flat on it

  5. Place a dollop (approx. 1t. – 1 T) of spaghetti sauce to cover the top of each round

  6. Top with a slice of cheese, Mozzarella or Colby/Jack

  7. Broil on high for 2-3 minutes, or until the cheese is all bubbly and browned

  8. Turn off the broiler and let it sit in the hot oven until ready to serve


NACHO EGGPLANT

As above, but substitute picante sauce for the spaghetti sauce and use Colby/Jack or Jack cheese


VARIATION

Put a slice of sandwich ham under the cheese and you have a meal fit for a king.
