Jean's Dy No Mite Okra Gumbo
  • about 1lb McKemie "Emerald Velvet" okra
  • a large onion - more than you think you want
  • about half a pound of fresh tomatoes (or a can of Ro-Tel type)
  • about 1/4lb of bacon (or smoked link sausage)
  • hot sauce to taste
  • a generous dose of "Cajun Seasoning"

    Cook bacon and onion until bacon is approaching crisp and onion is starting to caramelize. You can do that either in a skillet or in the 2 quart or larger pot that you will use for the completed gumbo.

    Prepare okra by rinsing and cutting off stem end. Optionally, cut okra pods into bite-size pieces. In pot, add all ingredients and water to cover. Bring to boil, then simmer until done, maybe 1/2 hour.

    Serve over rice, Basamati type preferred.
    Serves one (who appreciates okra) or 100 (who do not appreciate okra).
